Chocolate Strawberry Cookie Pizza

Ingredients:

chocolate cookie dough

Ingredients:

1 ½ cups flour

½ cup cocoa powder

1 teaspoon baking soda

¼ teaspoon salt

¼ cup margarine, softened

1 cup brown sugar

1 egg

½ tablespoon vanilla extract

Directions:

In a bowl, combine the flour, cocoa powder, baking soda, and salt. In another bowl, combine the margarine and brown sugar. Mix in the egg and vanilla extract. Mix in the flour mixture. Spread batter evenly onto a pizza pan sprayed with cooking spray. Leave an inch from the edge. Bake at 350°F for about 8 minutes

Topping: 

6 ounces vanilla yogurt

¾ cup sliced strawberries

chocolate syrup

Directions:

After cookie pizza has cooled, spread yogurt over the cookie crust. Top with strawberries. Drizzle with chocolate syrup.

Chocolate Kale Cake

Ingredients:

3 large kale leaves

2 eggs

¼ cup sugar

1 teaspoon vanilla extract

¼ cup cocoa powder

½ cup flour

½ teaspoon salt

1/8 cup olive oil

powdered sugar

Directions:

Boil kale leaves covered in water in a saucepan for 5 minutes. Remove from heat and cover and let sit 2 minutes. Drain water. Puree kale in a food processor with 2 tablespoons of water. In a bowl, mix eggs, sugar, vanilla extract, and cocoa powder. Add kale and olive oil. Mix in flour and salt. Pour into a greased round cake pan. Bake at 350°F for about 30 minutes. Let cool. Dust with powdered sugar and top with strawberries.

Spinach Brownies

Ingredients:

1/2 cup sugar

1/4 cup butter, softened

3 oz semi-sweet chocolate, melted

1 cup pureed spinach

2 tablespoons vanilla extract

1 egg

3/4 cup flour

1/4 cup unsweetened cocoa powder

1/2 tablespoon baking powder

Directions:

Boil three handfuls of spinach in a saucepan with water for 5 minutes. Drain. Mix spinach in a blender with 2 tablespoons of water until smooth. Cream together butter and sugar, stir in melted chocolate, pureed spinach, vanilla and egg. In a separate bowl, combine dry ingredients (flour, cocoa powder, baking powder and salt) and mix with batter until smooth. Place into a baking pan sprayed with cooking spray. Bake at 350°F for about 35 minutes.

Black Bean Chocolate Cookies

Ingredients:

1 can of black beans, drained

2 tablespoons milk

2 tablespoons flour

4 tablespoons cocoa powder

1/3 cup brown sugar

1 tablespoon ground cinnamon

1 tablespoon baking powder

1 tablespoon butter

Directions:

In a medium bowl, mash the black beans. Stir together the beans, milk, and butter until smooth. Mix in the remaining ingredients. Place about one tablespoon of batter per cookie onto a greased baking sheet. Bake at 350°F for about 20 minutes.

Chocolate Chip Chickpea Cookies

Ingredients

1 can of chickpeas, drained

½ cup sugar

2 tablespoons milk

1 egg

¾ cup flour

¼ teaspoon baking powder

¼ teaspoon baking soda

2 teaspoons vanilla extract

½ teaspoon salt

3/4 cup semisweet chocolate chips

Directions:

Rinse the chickpeas. In a medium bowl, mash the chickpeas. Stir together all the ingredients except chocolate chips until smooth. Mix in chocolate chips. Place about one tablespoon of batter per cookie onto a greased baking sheet. Bake at 350°F for about 15 minutes.

Eggplant Chocolate Chip Muffins

Ingredients:

3 cups flour

3 teaspoons baking soda

3 tablespoons milk

½ teaspoon salt

2 eggs

1 stick of butter, melted

2 teaspoons vanilla extract

3 cups eggplant, peeled and chopped

1 cup semisweet chocolate chips

Directions:

In a large bowl, stir together the flour, baking soda, and salt. In a separate bowl, mix eggs, butter, milk, and vanilla extract. Combine these ingredients with the flour mixture. Stir in eggplant and chocolate chips. Place in muffin pan with liners and bake at 350°F for about 25 minutes.

Chocolate Beet Cake

Ingredients:

2 cups flour

2 tablespoons cocoa powder

1 teaspoon ground cinnamon

2 teaspoons baking soda

¼ tablespoon salt

¾ cup + ¼ cup butter, softened

1 ½ cups brown sugar

3 eggs

4 oz semisweet chocolate, chopped

2 cans sliced beets, drained

1 tablespoon vanilla extract

Directions:

Mash beets in a bowl until smooth. In a separate bowl, mix ¾ cup butter and sugar and beat in eggs one at a time. In a microwave safe bowl, combine chocolate with ¼ cup butter and microwave 20 seconds and stir and repeat until smooth. Mix in mashed beets, vanilla extract and the melted chocolate to the bowl with butter, sugar, and eggs. In another bowl, combine flour, cocoa powder, cinnamon, baking soda, and salt. Add this dry mixture to the remaining mixture and mix until well combined. Pour into a greased cake pan. Bake at 375°F for about 50 minutes.

Chocolate Avocado Pudding

Ingredients:

3 medium avocados

1 1/3 cups milk

1/4 cup honey

6 tablespoons cocoa powder

2 teaspoons vanilla extract

Directions:

Peel, pit, and chop the avocados. Mix all the ingredients in a blender until smooth and creamy. Refrigerate.

Pinto Bean Fudge

Ingredients:

1 can pinto beans

1 cup cocoa powder

1 tablespoon vanilla extract

1/3 cup butter

5 oz evaporated milk

4 oz unsweetened baking chocolate

1 cup sugar

1 container of marshmallow creme (7 ounces)

Directions:

Drain and rinse the pinto beans. Microwave the beans to warm them. In a medium bowl, mash the pinto beans. In a saucepan, add sugar, milk, and butter. Boil for 5 minutes while stirring. Remove from heat and mix in cocoa powder, vanilla extract, marshmallow creme, chocolate, and pinto beans. Pour into a pan that has been sprayed with cooking spray. Cool at room temperature until firm. Cut into squares. Store in the refrigerator.

Mini Chocolate Yogurt Berry Pies

Ingredients:

premade mini graham cracker pie crusts

chocolate yogurt

strawberries and blackberries

vanilla yogurt

Directions:

Spoon chocolate yogurt into pie crusts. Top with berries and vanilla yogurt.

Chocolate and Fruit Oatmeal Bars

Ingredients:

2 eggs

1/4 cup melted butter 

1 teaspoon vanilla extract

2 chopped apples

2 cups oats

3/4 cup flour

1/2 cup sugar

1/2 teaspoon ground cinnamon

1/2 cup dark chocolate broken into bits

1/2 cup blueberries

Directions:

Combine eggs, butter, vanilla, and apple in a large bowl. Mix well. Add the oats, flour, sugar and cinnamon. Stir well. Gently fold in the chocolate bits and blueberries. Place into a baking pan sprayed with cooking spray. Bake at 350°F for about 35 minutes. Let cool and then cut into bars.

Chocolate Banana Cream Pie

Ingredients:

1 graham cracker crust

2 bananas, sliced

1 can (13.5 oz) coconut milk

1/2 cup sugar

1/8 teaspoon salt

1 cup semi-sweet chocolate chips

1/4 cup cornstarch

1/4 cup milk

Directions:

Arrange banana slices over bottom of crust. In a saucepan, add coconut milk, sugar, and salt. Heat over medium high heat just until boiling. Reduce heat to low and mix in chocolate chips. Cook with stirring until smooth. Increase heat to medium and stir in cornstarch and milk. Cook 5 minutes with stirring. Pour chocolate mixture over banana slices in crust. Refrigerate about 2 hours. Top each pie serving with 1 tablespoon whipped cream and a banana slice.

Chocolate Chip Cherry Cobbler

Ingredients:

1 (21 oz) can cherry pie filling

1 cup all-purpose flour
1 1/4 cup oats
3/4 cup packed brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon salt
10 tablespoons butter, melted

1 cup semi-sweet chocolate chips

Directions:

Pour the cherry pie filling in the bottom of a greased casserole dish. In a medium bowl, combine flour, oats, sugar, cinnamon, and salt. Stir in butter. Mix in chocolate chips. Sprinkle over cherries and bake at 350°F for about 40 minutes.

Hot Chocolate Cake in a Mug

Ingredients:

2 tablespoons butter

1 egg

2 tablespoons milk

1/4 cup hot cocoa mix

4 tablespoons flour

1/8 teaspoon baking powder

1/8 teaspoon salt

​Directions:

​In a large mug, microwave butter in 10 second increments, until melted. Beat in egg and milk. Stir in hot cocoa mix, flour, baking powder, and salt. Pour half of the batter in a separate mug to make 2 hot chocolate cakes in a mug. Microwave for 2 minutes. Sprinkle powdered sugar on top.
